Cacio ricotta is so good! I cooked the cavatelli you saw, with cherry tomatoes and arugula, last night, and I so wished I had cacio ricotta.

Sii. Gnocchetti sardi. According to the Encyclopedia of Pasta, they all evolved from the gnocco common in the medieval Italian kitchen.
